Lauren has been a food blogger for over ten years. "Oatmeal with a Fork" is her place to share ways to eat and live well, inspired by her own healing journey with chronic Lyme Disease, allergies, and multiple chemical sensitivities.
Her goal with "Oatmeal with a Fork" is to show readers healthy, lower-sugar recipes that her family and she enjoy. She possesses a dry wit and a passion for healthy, from scratch eating. She hopes this will be a blog that readers will find both funny and tasty.
From a young age, Lauren loved to cook and bake. As a kid, she used her family dining room as her 'restaurant,' which she named 'Lori's Cottage House.' She would craft a menu and invite her parents to a delicious meal of her 'special' spaghetti, even charging them, but they were good sports, and she would get a big tip from her dad.
Her life has been full of twists and turns, all of which brought her to start this blog. She wanted to name the blog for both herself and her husband, so she combined her love for oatmeal and his affinity for eating it with a fork.
She creates most of her recipes around her myriad food allergies, as well as other health issues, including Lyme disease. Today, she is married to a cute fireman, and they have four kids together, three girls (Jade, Natalie, and Miki) and a boy (Sam).
