Patrick's two-year stint in Mexico fueled a deep passion for its cuisine. Inspired by his experiences, he created this site to generously share the recipes and techniques he picked up along the way.

Originally planning a brief visit to obtain his scuba certification, Patrick unexpectedly extended his stay to two years. At that time, he introduced himself with the joys of diving but also kindled a love for the local food scene.

Nestled in a guesthouse within a family compound, Patrick shared daily life with an octogenarian matriarch and her daughters. The youngest, Mimi, took charge of preparing every family meal. Motivated by this culinary environment, Patrick embarked on his own kitchen adventures. Over time, he honed his skills, mastering the traditional techniques he encountered.

Today, Patrick resides in Hawaii, hailing from Indianapolis. Both locations lack the authenticity of Mexican cuisine he grew to appreciate. It's disheartening to witness the diluted version of 'Mexican' fare north of the border.
